The taralli are then hand-tied one by one, briefly boiled in water, and perfectly baked in a wood-fired oven. This is why they are called scaldati and are incredibly crunchy! Their irregular shape and varying color also testify to the artisanal nature of this product, just like the ones made by grandmothers.
