Asiago PDO cheese is produced with whole milk and matured for at least 20 days. It has a characteristic white or slightly straw-yellow color, and is characterized by marked and irregular holes and the taste of freshly milked milk; delicate and pleasant, it melts pleasantly in the mouth leaving an irresistible sweet and slightly acidic note.
