Prussian Manzetta is one of the most prized meats around today. Although the name might suggest otherwise, Prussian Manzetta is not a breed, but a selection of the best beef raised in northern Poland, in the Thousand Lakes region.
The characteristics that have made it a product of excellence are its extraordinary tenderness, given by the numerous veins of fat, and its sweet flavor obtained by incorporating, within the animal's diet, sugar beet. This promotes what is known as the Maillard reaction during cooking, that typical outer crust that seals the meat, preventing liquids from escaping.
