Piacentino (or Piacentinu) Ennese is a typical cheese from the central area of Sicily, made with whole raw sheep’s milk, to which saffron and black peppercorns are added. Depending on its aging, its flavor becomes progressively more intense and almost spicy, with the delicate notes of saffron rounding out its taste.
